Linzer Cookies filled with dulce de leche
Hi everybody hope you're enjoying your week! The Summer is crazy right? it hasn't even started officially here but damn the weather is hot as hell! But what can you do to beat the wheather a bit? of course you can make some popcicales but you also can make ths delicious linzer cookies! maybe that was a bad introduction but i don't know about you, I'm always in for cookies, especially linzer cookies filled with jam or in this case dulce de leche! Dulce de leche makes everything taste 10 times better! Here's the recipe for you to try it out for your self. Also thanks to Marley and Bodi, I now have a personlized knife for my own, that has "never stop dreamng" carved on it! oh yeah it is my motto and the name of this wbsite too! I'm so happy with it, it's wonderfully beautiful, so here are more pictures of this beauty!
Recipe:
Ingredients:
Flour 2 cups
Corn Starch 1/3 cup
Powdered Sugar 1/3 cup
Butter 225 gr
Vanilla 1 tsp.
How to make:
1) Mix flour, corn starch with vanilla and sugar and put it aside.
2) Beat the butter with mixer so it becomes white and fluffy. (Remember: You should put the butter out of refrigerator an hour before start making).
3) Gradually, add the flour mixture to the butter and mix it all until it looks like a dough (don't beat too much).
4) Put the dough on a baking parchment paper, put another one on top of it and roll it out till it reaches the 6 mm of thickness. Then put the dough in refrigerator for couple of hours or one day.
5) After that, take out the dough and cut it with your preferred cookie cutters. When you made cookies out of dough completely, put the cookies in refrigerator for couple more hours. We don't want them to be loose. After few hours, cookies are ready to be baked.
6) For filling the middle of cookies with jam, use double cookie cutters. Put the finalized cookies in the oven for 15 mins in 347 f degree.
7) When the edges of the cookies turn golden, you'll know your Linzer cookies are ready! Spread jam in one side of the cookie and put the other side on it like a sandwich.
Some tips:
If while cutting the cookies, dough seems a bit soft, put in the refrigerator for a couple more hours.
Before putting the cookies in the oven, preheat it for 15 mins.
You can use whatever jam you like! I used cherry jam and dulce de leche
