Ingredients:

1, 1/4                                  Butter

3 large                                 Eggs

2/3 cup                                White Sugar

2/3 cup                               Brown Sugar

1 tsp                                   Vanilla Sugar

1,1/4 cup                            Flour

2 tsp                                   Baking powder

1,1/2 tsp                             Baking soda

1 tsp                                   Cinnamon

2,1/2 cups                           peeled and finely grated carrots

1 cup                                  chopped walnuts

2/3 cup                              apple sauce

Making the cake:

1) Preheat the oven to 350 F.

2) Prepare two 6-inch cake pans with butter and flour, crumbs or parchment paper.

3) Melt the butter, and let it cool.

4) Beat the eggs with the granulated and Muscovado sugars until the mixture is light and fluffy. Mix in the butter and vanilla sugar and beat a little ore.

5) Blend the flour, baking powder, baking soda and cinnamon and sift it into batter. Beat just until the batter holds together.

6) Fold the carrots, nuts and applesauce into the batter. Divide the batter evenly between the prepare cake pans.

7) Bake the layers for 40-45 minutes or until a toothpick inserted into the center comes out with moist crumbs.

Making the cream cheese frosting:

1) Beat the butter until it is white. Add the cream cheese, and beat until the mixture is smooth and thick.

2) Add the confectioners' sugar and vanilla sugar and beat a little more. If the frosting is not set enough, refrigerate it for a while.

Assemble the cake:

1) Slice each layer in half horizontally so you will have four thin layers for cake.

2) Place the first layer on a cake plate or board. Spread an even layer of Cream Cheese Frosting over the layer. Repeat until you're covered these layers. Place the last layer on top, cut side down.

3) Spread the rest of the cream cheese frosting over the whole cake and sprinkle a layer of coconut flakes over the frosting. If necessary, lightly press the coconut into the frosting with your palm. Decorate the top with fabric flowers or any other decorations you like.
